Andrew spoke with Pastor Alan Cross of Gateway Baptist Church in Montgomery in regards to Community Development Initiatives, an organization designed to meet both spiritual and physical needs in the community and around the world. Today is Memorial Day! Don't forget to thank the Lord for those who have given their lives in defense of our liberties. We heard sound clips of a recent celebration service held at Trinity Presbyterian Church in Montgomery. Major Kevin Gerard of LIMA Company made the remarks.

~ Pamela's strawberry recipes were borrowed from a couple of online sites! Try one today!

RecipeStrawIced Strawberry Soup (a favorite recipe from Homestead Farm customer Irene Fischer who got it from a newspaper)

2 pints strawberries (1 quart)
1/2 cup cold water
1/2 cup orange juice
1/2 cup sugar, or to taste
1/8 teaspoon ground cardamom
2 cups plain yogurt

Wash and hull strawberries. Puree strawberries with the water in container of blender. Pour mixture into large bowl; stir in orange juice, sugar and cardamom until sugar is dissolved. Blend in yogurt; chill.Serve in chilled bowls garnished with additional sliced strawberries and sprigs of mint, if you wish.

Elizabeth Schwart’s Strawberry Bread(a favorite recipe from Homestead Farm customer Irene Fischer who got it from a newspaper)

3 eggs
1 1/2 cups sugar
1 cup salad oil
1 tablespoon vanilla
2 cups flour
1 cup quick oats
1 tablespoon cinnamon
1 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon baking powder
2 cups crushed strawberries

Beat eggs and sugar; add oil and vanilla. Mix in flour, oats, cinnamon, soda, salt and baking powder. Add strawberries and mix well.Pour into two greased and floured 4- x 8-inch loaf pans.

California Strawberries and Fresh Mozzarella with Mint DrizzleYield: 24 servings

Mint Drizzle:
3 cups extra virgin olive oil
l1 oz. mint leaves
3 lbs. 12 oz. stemmed and sliced California strawberries
2 oz. sugar
6 lbs. fresh mozzarella cheese slices, 1/2 inch thick
1/4 cup Balsamic vinegar as needed
mint sprigs

In blender, combine olive oil and mint. Process until smooth. Cover and refrigerate.
In bowl, combine strawberries and sugar, cover and set aside.
For each serving:Plate 4 ounces mozzarella, overlapping slices. Spoon 1/2 cup sugared strawberries around cheese. Drizzle 2 tablespoons Mint Drizzle and 1/2 teaspoon balsamic vinegar over cheese and strawberries. Garnish with mint sprigs, as desired.
